Life's Moments

Life's Moments.  This is the task that we were given as part of the AllRecipes Brand Ambassador program for this month.  Specifically, mine was "Taste a New Food".  This was a real challenge for me as I have eaten all kinds of, what most people would think of as, weird foods.  I spent several days trying to think of something that I had never tried before.  It also must contain cheese, as our Sponsor for this month is Sargento.  I finally realized that I had never eaten a Souffle, never made one either for that matter. The dish also had to be something that we had created ourselves.   So, I started on my journey with a special Life Moment.  I first watched a video on AR of Chef John preparing an asparagus souffle.  Great information, however, he said that it would deflate before it got to the table and it did.  So, my second challenge was to photograph it while it was still in all it's Glory.  As I am not the best photographer in the world I was scared that I wouldn't get a picture that was good enough to publish.  Hah!  A Great Life Moment was about to happen. I won't keep you in suspense any longer.  Here is my Cheese and Prosciutto Souffle




  • 3 tablespoons butter plus additional for preparing dish
  • 3 tablespoons flour
  • 1 cup cold milk
  • 1/2 teaspoon salt
  • dash cayenne
  • 4 eggs separated
  • 1 cup parmesan cheese
  • 3 oz prosciutto, chopped

Directions

  1. Preheat oven to 375 degrees. Butter 6 6 ounce ramekins generously. Set aside. Melt butter in a saucepan and add flour. Cook for a couple of minutes. Don't let the flour brown. Add cold milk. Whisk to ensure there are no lumps. Add egg yolks and mix thoroughly. Add cheese and prosciutto and combine. In another bowl whisk egg whites until fairly stiff. Fold the egg whites gently into the sauce mixture. Divide the mixture between 6 ramekins filling them to about three quarters. Place in oven and cook for 20 to 25 minutes. Do not open the oven door while these are cooking as they will deflate
I am so happy to have been given this challenge.  It was fun and interesting and of course, yummy.  I have some other thoughts in my head now for other personal recipes to create.  Well back to the kitchen for me.
